Al Brady

Al will be demonstating in the Tante Marie Culinary Academy Theatre on all three days of the festival, alongside his Tante Marie colleagues. He will be preparing: Boudin Blanc with confit chicken wing, pomme mousseline and a beetroot port jus.

Alex (or 'Al' as he likes to be known) is also one of Tante Marie's senior teachers, but before joining the team, he worked under Michel Roux Jnr at the world-famous Le Gavroche.

Bringing industry experience at the highest standard to the Academy's training, Al has earned a fierce reputation amongst the students – he is the one they are all afraid of, until they actually have a class with him, when they realise that he is actually just brilliant, and has a knack for getting the best out of our students by just saying it how it is!

Established in 1954, the Tante Marie Culinary Academy is the oldest UK independent cookery academy which is based in Woking.
