Michael Wignall

Michael will be demonstating in the Tante Marie Culinary Academy Theatre at 1pm on Sunday 6 September. On the menu will be: English raspberry textures, coco sponge, single estate aero chocolate and frozen cheesecake rocks.

Michael’s impressive career originates from tenures at prestigious restaurants, including Broughton Park in Preston, Heathcote’s, L’Ortolan with John Burton Race, Cliveden, The Devonshire Arms, and in November 2007 he took on the lead role at The Latymer at Pennyhill Park, Bagshot.

His natural flair in the kitchen, expertise and passion for food has contributed to the many successes of ‘Michael Wignall at The Latymer’; most notably, it is the first two Michelin starred restaurant in Surrey which also holds five AA rosettes.

Michael, who was awarded his first Michelin star 14 years ago, describes his cooking as ‘complex and carefully crafted’. Whilst the style is technical and the presentation elaborate, the food itself is not intimidating, with its roots in familiar classical themes. The textures, flavours and ingredients are precisely balanced to complement each other, rather than jostling for position on the tongue.

Recently given the accolade of ‘Best Chef you have never heard of ' by Olive magazine, Michael’s profile is growing as guest judge on BBC’s MasterChef The Professionals and he was recently seen competing on ITV’s ‘Britain’s Best Dish – The Chefs’.

Michael’s career nearly took a different path as a professional BMX biker. Instead, when he’s not in the kitchen, he gets his thrills from travelling the world and extreme sports, such as wakeboarding, snowboarding and downhill mountain-biking.
